Dinner & Dexter

Sunny & bright, a slight chill on the air, a delightful winter day indeed. right on the verge of getting cold, we still have one more day of nice stuff before the cold returns to our doorsteps once more. I found myself getting all the things done I needed to and actually wanted to. got the car washed and cleaned and got some errands done, with all that under my belt an accomplished day of being productive has been fully achieved, and it does make me happy.

Had a delicious breakfast this morning at Steak n Shake, and then the day was started.  stopped by Target and Walgreens for a couple of things, and hit the store for the remainder of the ingredients for tonight's dinner with the guys. They have been cleaning the house next door since they moved out, and let me tell you, its trashed...they have been pitching so much trash out of the doors and windows, and then hauling it to trailers and their pick up trucks. a realtor has the property, so hopefully it will move quick, and sell to some wonderful neighbors.

Tonight the buds came over for dinner and a few episodes of "Dexter" I wanted to make something that would be delicious, yet filling. so I ended up making (for my first time) a beef pot pie. it fed 5 of us and man was it a tasty meal. sadly I forgot the peas, but honestly nobody missed them so I didn't worry about it. here is tonight's recipe for goodness and it has a great yummy factor indeed:

Fuzzycub's Beef pot pie
---------------------------------
1 lb of meat, stew meat or round steak can be used
1 (14 oz can) beef broth
3 lg carrots diced
3 potatoes cubed
1 cup frozen peas thawed
3 tbs cornstarch
1/3 cup water
2 puff pastry shells


Directions

1. in a skillet over medium heat, brown the pieces of meat on all sides. Pour in some water to almost cover. Bring to a boil and reduce heat.
    Simmer until meat is tender and falls apart easy. Transfer meat to a large mixing bowl.  shred the meat slightly, and add salt and pepper to taste.

2. In a sauce pan, over medium heat, pour in beef broth, add carrots and potatoes, cook until almost tender, about 15-20 minutes. preheat oven to 350 degrees

3. when the carrots and potatoes are done, transfer to large mixing bowl with the beef, leaving the liquid in the pan. Combine the peas with the carrots, potatoes and meat.

4. Dissolve the cornstarch with the 1/3 cups of water, pour into the saucepan of beef broth, stirring constantly.  bring to a simmer and reduce heat. cook for 5 minutes. pour over the mixture.

5.  put one of the pastry shells in the bottom of the bowl your going to use, pour the inside ingredients into the bowl,  (potatoes, peas, carrots, meat, gravy) put the other pastry shell on top of the mixture,   and cook it at 350 for about 30 minutes, or until crust is brown.

yes, it was delicious! and unfortunately there wasn't any leftovers... it really was the perfect meal for a chilly night with friends. after dinner we all had some delicious homemade devils food cake with white icing, such a contrast. after dinner the buds and I chilled out watching some Dexter, laughing and just enjoying each others company.  tomorrow is a day with the guys, we are heading down to the lake area again for a party with the girls. will most definitely be different going down for that alone. guess we need to go check on the lake area as well.. darn :)
